Ingredients
- 1/3 cup canola oil
- 1/2 cup evaporated milk
- 1 egg
- 3/4 cup unsweetened applesauce
- 2 cups healthy flour blend
- 2/3 cup sugar
- 1 tbsp. baking powder
- 1/4 tsp. cinnamon
- 1/4 tsp. salt
- 1/3 cup strawberry jam
Instructions
Preheat oven to 375°F. Grease 10 cups of a 1 cup muffin pan or line with paper liners. Combine wet ingredients excluding jam in a medium sized bowl. Add flour blend, sugar, baking powder, cinnamon and salt. Stir until just combined. Add strawberry jam, mixing lightly. Divide evenly among the 10 prepared muffin cups, pouring water into the 2 unused cups. Bake in centre of preheated oven for 20-25 minutes or until golden and top springs back when lightly pressed. Cool in pan.
