Ingredients
- Grease for pan
- 2 1/2 cups all purpose flour + some for pan
- 3/4 cup granulated sugar
- 1 tsp.. cinnamon
- 1/4 tsp.. salt
- 1/4 cup molasses
- 2 large eggs
- 1/2 cup canola oil
- 1/2 cup buttermilk
- 2 tsp.. baking soda
- 1 cup boiling water
- 1/2 cup ginger or spices to desired amount
- Confectioner's sugar, for dusting
Instructions
Preheat oven to 350°F with rack in the lower third of oven. Grease 9" square baking pan. Line bottom with waxed paper and dust entire pan with flour. In a large bowl, whisk together flour, sugar, cinnamon, and salt. Add molasses eggs, oil, and buttermilk. Dissolve baking soda in boiling water. Add baking soda water to rest and mix until just combined. Add ginger and other spices. Scrape batter into pan and bake until corners are set and toothpick in centre comes out clean, about 40 min. Cool 10 min in pan then invert onto cooling rack. Serve warm dusted with confectioners' sugar.
