Ingredients
- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 4 squares melted unsweetened chocolate
- 2 cups flour
- 2 tsp.. baking powder
- 1 tsp.. baking soda
- 1/2 tsp.. salt
- 1 tbsp. cinnamon
- 1/4 tsp.. nutmeg
- Pinch of cloves
- 2 cups grated carrots
- 1 19 oz. can drained, crushed pineapple
- 1 tsp.. vanilla
- 1/2 cup chopped walnuts or pecans
Instructions
Heat oven to 350°F. Grease and flour 10" Bundt or tube pan. Beat eggs on medium peed of mixer until very frothy. Gradually add sugar, oil and melted chocolate, beating until light. Sift together flour, baking powder, baking soda, salt and spices. Add to egg mixture; mix well. Combine carrots, pineapple, vanilla and nuts; add to batter and mix thoroughly. Pour into pan. Bake for 50-60 minutes. Invert on rack and cool.
