Mix flour and sugar in large mixing bowl. Cut shortening into cubes. Work into flour mix until it resembles coarse crumbs. Sprinkle water in, stirring constantly until dough forms ball. Wrap dough in plastic wrap, chill for min 30 min. Preheat oven to 375°F. Combine sugar and cinnamon in a bowl. Toss apples in 1/4 cup of this mixture. Roll dough on a lightly floured surface until it is 1/4 inch thick. Cut it into 14 4inch squares. Add 1 tbsp chopped apple mix to each square. Brush edges with beaten egg. Fold edges over apples until they touch. Bake for 30-35 minutes until golden brown
