Ingredients
- 1 cup flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 egg
- 1 cup 2 tbsp peanut butter, divided
- 1/4 cup oil
- 1/2 cup packed brown sugar
- 1 cup milk
- 2 tbsp strawberry jam
Instructions
Heat oven to 400°F. Mix flour, baking powder, baking soda and salt. Beat egg, 1 cup peanut butter, and oil until well blended. Add sugar and milk, mixing well. Spoon just enough batter into each of 12 muffin cups. Top with jam and remaining peanut butter. Cover with remaining batter. Bake for 15 min or until lightly browned.
