Combine Salt Sugar and spice in 2 litres of water and heat until sugar and salt dissolve. Boil it and then simmer for 5 minutes. Remove from heat and allow to cool. Stir in 2 more litres of water and cool completely. Pour into container large enough to hold turkey. Add the turkey and more water to submerge it. Roll it over a few times and leave it front side up. Chill 5-6 hours. Discard brine before roasting. For overnight brine, cut sugar and salt in half.
