French-Style Pea Soup

Ingredients
- 2 tbsp butter
- 3 slices of diced bacon
- 1/2 cup ham, diced
- 1/2 cup onion, chopped
- 1/2 cup carrot, diced
- 1/2 cup celery, diced
- 2 bay leaves, dried
- 1 clove garlic, chopped
- 1 cup dried split yellow peas
- 1/2 tbsp thyme, chopped
- 1 carton chicken broth
- salt and pepper to taste
Instructions
Melt butter in large saucepan over medium heat, add bacon and sauté. When bacon starts to crisp, add ham and sauté for 5 minutes or until ham starts to caramelize. Add onion, carrots, celery and bay leaves, continue to sauté for 5 minutes or until caramelized. Add garlic, dried split peas and thyme, continue to cook for 2 minutes. Add broth and cook until the split peas are tender. Remove bay leaves and season to taste
