Ingredients
- 1 cup chopped dates
- 1 cup boiling water
- 1 tsp. baking soda
- 1/2 cup butter
- 1 cup white sugar
- 1 egg
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1 1/2 cups flour
- 1/2 cup chopped nuts
- 5 tbsp. brown sugar
- 3 tbsp. butter
- 2 tbsp. cream
- 3/4 cup coconut
Instructions
Mix dates, water and baking soda; set aside to cool. Cream butter and sugar, then add eggs. Mix baking powder, salt, flour and nuts; add to butter mixture alternately with the date mixture. Bake at 350°F in a deep 9" pan for 30-40 minutes or until knife inserted in centre comes out clean. Combine brown sugar, butter, cream and coconut and boil gently for three minutes; spread on cake while cake is still warm. Place under broiler until topping is brown.
