Ingredients
- 1 tsp yeast
- 240g room temperature water
- 300g all-purpose flour
- 1 tsp salt
Instructions
Activate yeast. In large bowl, add flour and salt. Add yeast mixture and whisk until fully combined. The mixture should be sticky and wet (80%) hydration. Cover with plastic and let rise at room temperature. Box fold the dough. Rest 30min. Box fold. Rest 30min. Box fold. Rest 30min. Transfer dough to floured surface. Sprinkle dough with a little flour and shape it into a rectangle. Gently roll dough into a log and press to seal the edge. Divide into desired number of buns and place at least 2 inches apart onto greased baking tray and rest 40min. While resting, fill different baking pan with water and place on bottom shelf of oven. Preheat oven to 420°F. Bake buns for 20mins. Buns will sound hollow when done.
