Ingredients
- 1/2 cup soft margarine
- 1 cup brown sugar
- 1 egg
- 1/2 tsp. vanilla
- 2 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. lemon juice
- 1 cup milk
- 2 cups 1/2 " pieces of rhubarb
- TOPPING:
- 1 cup chopped pecan
- 1/2 cup sugar
- 1-2 tsp. cinnamon
Instructions
Cream butter, add brown sugar, beat in egg and vanilla. Blend flour, baking soda and salt. Combine lemon juice and milk and alternate with butter and milk. Mix in baking soda and salt. Fold in rhubarb. Pour batter into a greased 9 x 13" pan. In small bowl blend pecans, sugar and cinnamon and sprinkle on cake. Bake at 350°F for 40-45 minutes. Cool in pan at least 30 minutes before serving. Serve with whipped cream or ice cream or cool whip.
