Ingredients
- 1 cup oat flour
- 1 cup all-purpose flour
- 2 tsp. baking soda
- 2 tsp. ground ginger
- 1 tsp. ground cinnamon
- 1/2 tsp. ground allspice
- 1/2 tsp. salt
- 1 cup granulated sugar
- 1/3 cup ketchup
- 1/3 cup canola oil
- 1 egg
- 1/4 cup molasses
- 1 tsp. vanilla extract
- Additional granulated sugar
Instructions
Preheat oven to 350°F. Line a baking sheet with parchment paper. Stir oat flour with all-purpose flour, baking soda, ginger, cinnamon, allspice and salt to combine. use electric mixer on medium speed, to beat sugar with ketchup and oil for 2 minutes. Add egg, molasses and vanilla. Beat just until combined. Reduce mixer speed to low. Gradually add the flour mixture and mix until well blended. Scoop rounded spoonfuls and form into balls. Roll balls in additional sugar to coat. place 2 " apart on baking sheet. bake for 10-12 minutes or until golden brown on the edges and cracked on top. Cool for 2 minutes on baking sheet. Transfer to rack immediately after to cool completely.
