Melt butter in pan, add sugar, milk and chocolate (cut into pieces). Stir gently until chocolate melts. Boil without stirring to 238°F or until mixture forms a soft ball when tried in cold water. Remove from heat, let stand until cool, and add flavouring. Beat with wooden spoon or work with spatula on a marble slab/metal table. Pour 3/4 inch thick in buttered pan and mark in squares. Add in Optional toppings if desired.
