Boil brown sugar and water mixture until it reaches the "crack" stag, which will take almost half an hour. When it "cracks", lift saucepan from stove, add in baking soda and stir it into the mix. Pour in a buttered tin NOTE: a deep pan will be required as the candy rises in it when the soda is added.
